How do Datapaq systems work? Easily and reliably.
All Datapaq temperature profiling systems are comprised of a data logger, a protective thermal barrier, Insight software and thermocouples. The new Food Tracker system can also include system enhancements such as humidity measurement, food tray and thermocouple jig, and telemetry for real time temperature monitoring.

The logger, protected by a barrier, travels through the oven or freezer with the product, making a complete record of the temperatures reached by the product throughout the process.

Reset the data logger and place the logger inside the thermal barrier. Then connect the thermocouples to your product. Send the logger with your product through the oven to record the accurate temperature history. Use Insight software to convert raw data into meaningful information about your process.

Food Tracker system

All Datapaq Food Tracker systems are designed to travel through the oven with the product, measuring the true product and environmental temperature throughout the process. At the heart of the system the MultiPaq21 data logger, which records the temperature data, is protected from the heat of the oven by a thermal barrier. The critical product temperatures gathered are analyzed with Insight software, providing detailed reports at a single click.

System Enhancements

Humidity Sensor
Measure the humidity as well as the temperature in processes up to 200°C/ 400°F. This is ideal for baking applications such as proofing/proving, and also where humidity measurements can be used to help validate oven control, optimize yields and product quality.
 
     

Real Time Temperature Monitoring
Enormously helpful when setting up new processes, or validating ovens. Watch and instantly see when your product reaches the required temperature. For static and rotational batch ovens, such information can reduce cycle times significantly.

 
     

Food Tray and Thermocouple Jig
The food tray and thermocouple jig guarantee repeatability of the profile in conveyorized processes. The food tray can be used without any need to stop the conveyor line or otherwise disturb production. Food Trays are designed for small products (such as chicken nuggets). The Thermocouple Jig is designed for wide conveyorized processes such as large bakery ovens.

Data Logger

The new MultiPaq21 data logger has up to eight channels allowing you to collect product and environmental temperatures from up to eight locations at once. Using flexible thermocouple cables, the temperature sensors can be positioned precisely within the product, on the surface, or in the air. They can record temperatures without the data logger or its mass influencing the response characteristics of the sensors and thus the accuracy of the readings.

The data logger is designed to withstand the most hostile of food processing applications and is even rated to IP67 with special waterproof thermocouple connections protecting against steam, water showers and routine cleaning procedures.

The logger will store up to eight profiles before needing to be downloaded. Data logger features:

  • Simple start/stop options.
  • Can record product & environmental temperature measurements simultaneously up to 400°C / 750°F.

Thermal Barriers

Employing the same insulation technology as used in an aircraft's 'black box', Datapaq thermal barriers are housed in a rugged stainless steel casing, designed to last for many years. Datapaq thermal barriers can withstand the harshest industrial cooking environments including steam cooking, long duration high temperature bakery, or even flash frying where the whole system is submersed in oil.

Unlike other commercial systems there is no need to protect the data logger inside your product. Since the barrier can be located away from the product the heating characteristics of the product will not be affected by the monitoring equipment itself.

Process Analysis
Set-up the software to automatically calculate all your process critical control points, and satisfy your HACCP requirements. Use analysis features such as maximum and minimum temperature, time above temperature, heating and chilling rate, and lethality calculations (F0 / Decimal Reductions) to accurately prove control of your process.

Alarms can be configured within the software for all critical control points so that you know immediately when and where problems occur. Use the same data to recommend and prove corrective action measures.

Wizards
Wizards are designed to guide you step by step through a particular process, while at each step giving you the opportunity to 'back up' to a previous step if you realize you have made a mistake. They also cut down on training requirements.


Lethality Calculations & Reporting
Employ accurate lethality calculations for the micro-organism risk in your particular process and product. This is ideal for process development, validation and routine QA measures. From your product temperature profile, calculate against theoretical lethality parameters the F0 value and/or the actual number of decimal reductions (log reductions) in the population of the target micro-organism. Use this data in comparison with your defined target values to prove due diligence 'product safety' for yourself and your customers.

Monitor the change in F0 through the process, allowing accurate yet safe process optimization. Know the exact point in your process when the product has achieved safe cook, avoiding overcook, and increase yield and productivity.

Generate lethality reports to support process validation activities or possible HACCP corrective action plans.

 

Process Optimization & Fault Finding
Uniform heating of a product across a mesh belt conveyorized oven is essential for safety reasons as well as consistency of product appearance and yield. To help with routine oven servicing and fault finding, the Thermograph view facility shows the uniformity of heating over the working area of the oven. You can quickly locate the exact position of hot and cold spots on the graduated thermal contour map.

 

Reporting
Generate certified and traceable profile reports with ease that show graphically the oven trace and your CCP analysis results to satisfy all your HACCP documentation needs.

The report shows both the data and the necessary process information. Complement the raw data with notes and memos to explain process observations. Add zone markings and a distance axis so that you can see the product temperature changes in relation to the physical design of the oven. This is ideal for fault finding.

Show with a digital image exactly where the thermocouples were placed in the product or the oven. For batch ovens you can even create a 3D image of the product rack and show where the probes were placed on each shelf. This is an ideal way to remove any confusion for your staff about where to place the probes.


 

Thermocouples
The new multi-channel MultiPaq 21 data logger allows you to collect in one run product and environmental temperatures for up to eight locations at once. The temperature sensors can be positioned precisely within the product, on the surface, or in the air. They record temperatures without hindrance from the data logger or its mass influencing the response characteristics of the sensors.

Thermocouples are supplied with water tight connectors and gold plated connections to provide IP67 rating of the logger. Reliability and accuracy are guaranteed in the most hostile of environments including steam, water, and condensation. Thermocouples can be mixed, matched and interchanged according to the type of process and product. Thermocouple cable lengths can also be customized to match the exact requirements of the process.
